A cheese-topped breaded chicken dish that originates from Teesside is proving to be a hit at the newly-opened café at Wisbech Park Pavilion.
The Crazy Cow Café opened its doors last week just before the start of the Easter school holidays.
Its menu ranges from light snacks to more substantial meals, including parmos that are not often seen outside the Middlesbrough area.
The breaded chicken is topped with béchamel sauce and grilled cheese – but there’s also the option of adding bacon and mushrooms.
Gemma Hammond is from the four-strong family team that were granted the licence from Wisbech Town Council to operate the café.
She said: “We worked in restaurants and pubs before and came together with a dream of having our own food business.
“We didn't have a lot of money and found it difficult to set up.
“The council were looking for someone to run their new café in the park and we applied. We went in with a speech about us and what we want to offer.
“They loved us and we were chosen. We are so grateful for them choosing us and for liking who we are as people, not just about what our bank accounts say.”
Almost everything on the Crazy Cow Café menu can also be adjusted to suit vegans and food intolerances.
As well as the café space, the pavilion building has a community room and an office which are both available for hire.
There are also two toilets, one of which is an accessible ‘changing places’ toilet.
Located outside are two additional toilets.
Wisbech Town Council will be operating and managing the pavilion, as a tenant of Fenland District Council.
Gemma added the café is offering dog walkers free dog bags and doggie treats.
They also plan to hold a food bank there weekly.
She said: “We want to give back to the community and to show that no matter what background you have or where you're from, you can achieve your dreams.”
Crazy Cow Café is currently open Tuesday to Sunday 8am-4pm. They are extending their hours during the summer to 6pm.

The Mayor of Wisbech, Peter Human, said: “This marks a significant milestone in our shared commitment to fostering vibrant and inclusive community spaces, where residents can come together, connect, relax, and create lasting memories.”
